Ingredients

  • ½ cup brown sugar
  • ½ cup sourdough starter discard or active
  • 1 large egg
  • 1 tsp vanilla extract

  • ½ tsp salt

Instructions
 

  • Preheat the Oven – Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream the Butter and Sugars – In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add Wet Ingredients – Mix in the sourdough starter, egg, and vanilla extract until fully combined.
  • Combine Dry Ingredients – In a separate bowl, whisk together the flour, baking soda, and salt.
  • Mix Dough – Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  • Fold in Chocolate Chips – Gently mix in the chocolate chips, ensuring they are evenly distributed.
  • Chill the Dough (Optional) – For enhanced flavor and texture, refrigerate the dough for at least 30 minutes or up to 24 hours.
  • Scoop and Bake – Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake – Place in the oven and bake for 10-12 minutes or until the edges are golden brown but the centers remain soft.
  • Cool and Enjoy – Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Enjoy warm or store in an airtight container.

Notes

Use a sourdough starter that has been fed adequately for enhanced flavor depth. Chilling the dough improves the texture, making the cookies chewier. If you want crispier cookies, bake for one to two minutes. Store any leftovers in an airtight container for up to a week or freeze them to maintain freshness for longer.
