Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • cups Medjool dates chopped
  • 1 cup walnuts or pecans chopped optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until combined.
  • Fold in the chopped Medjool dates and nuts (if using).
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake for 10–12 minutes or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These date cookies taste great. They are sweet because of the dates. You can add nuts like walnuts or pecans to make them crunchy. Bake them a little less for a chewy texture. Add oats or cinnamon for a different flavor. They make a nice gift or snack with tea or coffee. They are a healthy treat.
