Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, and mix until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in the mini marshmallows (and chocolate chips if you're using them).
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Avoid overbaking the cookies. Underbaking them will keep them soft and chewy as they continue cooking on the baking sheet. You could add chocolate chips or chunks for an extra indulgent treat. Allow the cookies to cool on a wire rack, then enjoy them warm for the ultimate gooey experience.
